Awesome Vegan Breakfast in Whistler!

The Vegan Project LOVES breakfast. I mean, we love all meals…but breakfast, especially while sporting the previous evening’s makeup and reflecting on a night of righteous fun, holds a special place in our hearts. This new restaurant that I just found up in Whistler, with it’s incredibly satisfying assortment of ‘sides’, served as my perfect first meal to an already amazing day…minus the flaking mascara.

The Mexican Corner is a new establishment that’s recently changed owners, that’s why their sign currently reads ‘Deseo’s’, they don’t have a website, and their menu is still being constructed to meet the needs of their casual clientele.

After a lovely two hour walk around Lost Lake, we sauntered into this little corner joint, where we were greeted by a super friendly and animated waitress, who turned out to also be vegan. Reviewing the menu, I skipped, as I generally do, directly to the ‘sides’ section so I could construct my own custom meal. There was a wide selection of vegetable based offerings, including roasted veggies, beans, guacamole and hash, shown above. They were $2.50 each, which is a pretty sweet deal considering they were all carefully prepared, spiced out and flavourful…not your average sides.

The portions were ample, so when Kevin started digging into my guacamole and beans, I told him to have at ‘er, that I wasn’t going to be able to finish the whole plate. Ha, that was a lie.

The Mexican Corner, open for breakfast, lunch and dinner, is located right by the I.G.A in Whistler Marketplace, close to Starbucks and K.F.C. They may or may not have a new sign soon… they didn’t seem eager to commit. What they did commit to however, was VEGAN TORTILLA SOUP and lots of veggie options for their customers. I also couldn’t help but notice some very reasonably priced cocktails and fancy boozy coffees…reserved for those magic breakfasts that hold a special place in your heart.
