I have made a lot of different banana breads in my day, and I have to say that this Gluten Free Chocolate Chip Banana Bread is top contender for best yet!
The folks at North Coast Naturals kindly sent us some of their products to play around with in the kitchen. First up was the Daily Cleanse Fibre Powder containing probiotics. I subbed out 1/2 cup of a gluten free flour blend for North Coast Naturals Ultimate Daily Cleanse and not only did it add extra fibre to my banana loaf, it acted as a great binder in lieu of eggs!
Here’s how to make this little gem…
1 1/2 cups all-purpose gluten-free flour blend (I used Cloud 9 and it was great!)
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3 very ripe bananas
1/2 cup coconut oil
1/4 cup maple syrup
1 tsp vanilla
1 cup unsweetned almond milk
1/2 cup vegan chocolate chips
Preheat oven to 350F and grease a loaf pan with a bit of coconut oil.
Cream together coconut oil and maple syrup. Mash in the ripe bananas until smooth with a few lumps. Add the rest of the ingredients except the chocolate chips, and stir until well combined. Add 1-2 tablespoons of water, if needed to help blend. Fold in chocolate chips and transfer mixture to the loaf pan. Smooth out the top so that it is even and place in the oven for about 45 minutes. Transfer to a cooling rack until ready to eat.
Served with vegan butter and a chai tea is divine!
