Kale Hummus

You may or may not have noticed, that here at The Vegan Project we love our greens and are always looking for new ways to incorporate them into our daily lives – yes DAILY!  It is important, as vegans, to be healthy vegans, for our own well being of course, but also to be shining examples of plant-based health, to possibly encourage others to follow suit.

I wanted to make a creamy chickpea hummus and wondered how I could make it even more nutritious…and kale was the answer! And a tasty one at that…Green Power!

Ingredients:

1 can chickpeas, drained and rinsed

2 cups thinly sliced kale

2-4 cloves chopped garlic (depends on how big the cloves are and how zesty you like it, mine had quite the kick with 4!)

1/8 cup extra virgin olive oil

1/8 tahini

1/8 cup water

1/2 teaspoon salt

5 large basil leaves, thinly sliced

zest and juice of one organic lemon

Method:

Steam the 2 cups of kale in your vegetable steamer until soft, but still green.  The kale will condense down to about one cup.

Place all ingredients in your food processor or small chopper and blend.  I like my hummus very creamy, being why I added water.  If you like a more chunky hummus, omit water or pulse in your chopper instead of blending.  Serve with your favourite raw veggies (I had carrots and red pepper on hand) and munch away!
