I know what you’re thinking…a dessert made with chickpeas?! Can they be tasty? Can they be decadent? YOU BET!

These babies are super easy to make, high in protein from that magical legume aka the chickpea, and they travel well (I recently brought them to the beach and my babe friends loved them). I found this little gem of a recipe in one of my favourite publications, ALIVE Magazine. If you’ve never picked one up at your local grocery store, it has the best recipes and healthy living tips – and it’s FREE!


*I recommend making a double batch and storing them in the fridge between waxed paper.

1-14 ounce can of chickpeas, rinsed and drained

1/2 cup crunchy peanut peanut butter (unsalted)

1/3 cup maple syrup

1 tablespoon vanilla extract

1/2 teaspoon sea salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup vegan dark chocolate chips, divided

1/4 cup organic unsweetened finely shredded coconut


Preheat oven to 350F. Line an 8 or 9 inch square baking an with parchment paper.

In a food processor, pulse chickpeas until finely chopped. Add peanut butter, maple syrup, vanilla, sea salt, baking powder and baking soda. Blend until smooth. Pulse in half the chocolate chips. Batter will be very smooth.

Scrape mixture into pan and spread out evenly. Sprinkle with coconut, and then top with remaining chocolate chips. Press the chips gently into the batter so they won’t fall off later. Bake until edges are brown and firm, about 20-25v minutes.

Cool completely in the pan before cutting. Hold on to the sides of the parchment and lift out gently onto a cutting board. Cut into 16 squares and store between pieces of parchment paper in a metal tin or plastic container with a lid.

      In the fridge for up to 5-7 days and in the freezer for a month or so in an airtight container. Maybe even individually wrapped for optimal freshness 🙂
