This is my go-to salad after the gym or a yoga class. It’s really quick to make, ample portion of protein and greens, and is tossed in a simple and flavourful dressing. It really helps to replenish my body with iron, b-vitamins, and essential fatty acids after a rigorous fitness session, and it tastes GOOD! If you’re not a fan of tofu, replacing it with more hemp hearts, sunflower seeds, or chickpeas would be nice.
Ingredients for 1:
2 cups spinach ( I like to thinly slice my spinach leaves, they can be so big sometimes!)
2 tablespoons finely diced red onion
1/2 cup crumbled organic firm tofu
2 tablespoons hemp hearts
1 tablespoons nutritional yeast
1/2 an avocado, diced
Yummy Additions: Tomatoes, a few black olives, or cucumber.
Dressing:
1 tablespoon dijon mustard
1 teaspoon olive oil
1 teaspoon apple cider vinegar
Place all salad ingredients in a big salad bowl. Whisk together dressing ingredients and drizzle over salad. Toss everything together really well, smooshing the avocado a bit so it coats the spinach leaves.
