Protein Packed Sweet & Spicy PB Thai Medley

Today’s guest post recipe comes from full-time working mom AND winning vegan figure competitor Melissa Hauser (aka Plant Powered Hauser.)   This “yummy mummy” just KILLED IT at the NPC Natural Open Colorado competition on October 12th taking home a first place trophy in her division AND the overall title! Her physique was on point and she credits it to always eating nutrient-packed, high-protein meals such as this one.  Quick & easy, this stir fry combines both sweet and spicy flavours in a savoury peanut sauce, whilst packing an impressive 46 grams of protein per serving!

Ingredients:

Medley:
½ cup chopped white or yellow onion
2 cups chopped broccoli
1 medium chopped red bell pepper
1 cup chopped shitake mushrooms
2 cups chopped kale
8 oz prepared diced seitan (or tofu)

Sauce:
1/3 cup PB2 (powdered peanut butter)
1 Tblsp. fresh lime juice
3 teaspoons Braggs Liquid Amino Acids
1 teaspoon Sriracha Hot Sauce
1 cup water

Method:

In a large saucepan over medium heat, sauté onion in a thin layer of water for about 5 minutes while cutting remaining vegetables.  Add broccoli and pepper to sauté; cook for another 3-5 minutes.  While these are sautéeing, mix all sauce ingredients in a small bowl with a wire whisk (add additional Sriracha to taste).  Add mushrooms, kale and seitan to sauce pan, and finally mix in sauce.  Allow to cook for another 3-5 minutes, or until vegetables reach desired tenderness.  Serve alone, or atop a bed of spinach, brown rice or quinoa.

Makes 2 servings.

Per serving: 332 calories, 34 g carbs, 3 g fat, 46 g protein

    • I have seen it once in Canada. It was at a little health food store in Langley, BC. I’m sorry, but I can’t remember the name of it! I’m going to try to find it again the next time I’m out there.
